The log files and/or folders are the most important thing to exclude
Additionally, we have different kinds of logging available in the product, which may exist in different locations depending on your configuration. All our our EXE files can create additional logging as specified in the [appname].exe.config files (ObjectLog, SQLLog, JobGenLog). You would not have this logging enabled permanently, but you may wish to exclude the EXEs and any log directories that are specified in the .exe.config files as a precaution in the event that you do enabled additional logging for troubleshooting purposes.
Database files should be excluded from on-access-scanning, but that should be standard configuration on a database server.
On the Job Servers you will want to exclude the directory where the Job Service Logs are stored. This location can be verified by opening the Job Service Configuration application.
On your IT Shop Web Servers, it would be recommended to exclude website's cache. You can configure the web.config file with our WebDesigner.ConfigFileEditor.exe (the recommended tool for this) or with a simple text editor.
