Can a backup be fully restored from a specific date in the past, a point in time restore?
As a general rule a backup done today will overwrite the data that was backed up yesterday. One exception to this is the configuration file. A new one is backed up every day so over time the "Config" directory in the backup will grow with backed up configuration files.
Therefore, when you do a complete restore, you could restore an older configuration file but everything else would be the data saved from the most recent backup. You cannot do a complete point in time restore. You can only do a complete restore from the most recent backup.
